Cinnamon Porridge with Berry Compote

Warm the cold days with this delicious porridge recipe…

I’m an absolute porridge fiend! I eat it for breakfast, pudding, a snack… you name it! I love how versatile porridge is and this recipe is up there with my favourites.

Prep time: 2 mins Cooking time: 10 mins Quantity: Serves 1

Ingredients:

  • Handful of frozen berries for compote (I used strawberries, raspberries & blueberries)
  • 1 tsp honey
  • 60g oats
  • 250ml almond milk (or alternative milk)
  • 100ml water
  • 1 tsp cinnamon
  • Sprinkle of salt
  • 25g vanilla protein powder

Optional topping: Pip and Nut almond butter

Method:

  1. Put the berries and honey into a pan. Bring to the boil and then simmer.
  2. Whilst the berries are simmering, put the oats, 3/4 of the almond milk, water, cinnamon and salt into a separate pan. Bring to the boil and turn down to a medium heat.
  3. Once the berries are a jam like consistency, take off the heat and set aside.
  4. Cook the oats until you have almost reached your desired thickness.
  5. Mix the protein powder with the remaining almond milk to ensure it isn’t lumpy. Add to the oats and stir through.
  6. Cook for another minute or two and then spoon your creamy oats into a bowl. Top with the berry compote and any toppings you like. I drizzled my oats with Pip and Nut almond butter which finished it off nicely. Enjoy!

KP’s top tip: make sure you mix the protein powder with some milk. This stops it going lumpy and is the key to this recipe being so creamy.
