Warm the cold days with this delicious porridge recipe…
I’m an absolute porridge fiend! I eat it for breakfast, pudding, a snack… you name it! I love how versatile porridge is and this recipe is up there with my favourites.
Prep time: 2 mins Cooking time: 10 mins Quantity: Serves 1
Ingredients:
- Handful of frozen berries for compote (I used strawberries, raspberries & blueberries)
- 1 tsp honey
- 60g oats
- 250ml almond milk (or alternative milk)
- 100ml water
- 1 tsp cinnamon
- Sprinkle of salt
- 25g vanilla protein powder
Optional topping: Pip and Nut almond butter
Method:
- Put the berries and honey into a pan. Bring to the boil and then simmer.
- Whilst the berries are simmering, put the oats, 3/4 of the almond milk, water, cinnamon and salt into a separate pan. Bring to the boil and turn down to a medium heat.
- Once the berries are a jam like consistency, take off the heat and set aside.
- Cook the oats until you have almost reached your desired thickness.
- Mix the protein powder with the remaining almond milk to ensure it isn’t lumpy. Add to the oats and stir through.
- Cook for another minute or two and then spoon your creamy oats into a bowl. Top with the berry compote and any toppings you like. I drizzled my oats with Pip and Nut almond butter which finished it off nicely. Enjoy!
KP’s top tip: make sure you mix the protein powder with some milk. This stops it going lumpy and is the key to this recipe being so creamy.
